1 1/2 cups elbow macaroni2 Tbsp unsalted butter2 Tbsp flour1/2 cup 2% milkmozzarella cheese, part skim, shredded (52 grams)cheddar cheese, shredded (18 grams)salt and pepper to taste
Shred cheeses, set aside.
Bring water to a boil for the macaroni. Once it is boiling, add pasta and cook until al dente (approx. 6 minutes)
While water heats/pasta cooks, melt butter in a pan.
Once butter is melted, whisk in flour for about 1 minute.
Whisk in milk until no lumps remain.
Whisk in shredded cheeses, salt and pepper.
Once pasta is cooked, drain and add to cheese sauce in pan. Stir until pasta is coated. Serve immediately.
*Note-- If the sauce gets too thick/stringy, add a little water and stir to help loosen it.
