Festive Mexican Salsa

2 ears of corn, cooked and trimmed1 can (15 ounces) black beans, drained and rinsed1 cucumber, diced1 green bell pepper, diced2 cups grape tomatoes, sliced in half4 green onions, diced2 tablespoons chopped flat-leaf parsley1/2 teaspoon minced garlic1/3 cup olive oil2 tablespoons red wine vinegar1 teaspoon sugar1/4 teaspoon curry powder1/4 teaspoon dry mustardsalt and pepper to taste
Combine corn, beans, cucumber, green peppers, tomatos, green onions, parsley and garlic in a large bowl. In another bowl, whisk together the remaining ingredients. Toss with the vegetables. Refrigerate, covered, for four hours to let flavors meld.
