Mixed Vegetables with Spelt Berries

Ingredients
1 cup of dried Spelt Berries - Cooked1 tsp of Olive Oil1/4 cup onion - diced1 clove garlic - diced1/2 a large bell Pepper - diced1 Medium Zucchini - diced2.5 cups Broccoli - chopped2 Roma Tomatoes - choppedDash of Italian SeasoningDash of ParsleyDash of salt & pepperDressing1 Tbsp of Olive Oil2 Tbsp of Balsamic Vinegar1 tsp of Parsley1 tsp. of saltBlack Pepper to taste
Directions
Cook your grain according to directions on package. (For added flavor cook in broth instead of water)

In a frying pan, add 1 tsp of Olive Oil. Add your onions and garlic and saute till transparent about 3 - 5 minutes.

Add the bell pepper, zucchini, broccoli and cook for about 5 minutes.

Sprinkle with Italian Seasoning, Salt & Pepper. Add your tomatoes and cook for a few minutes.

Add your spinach and cook until wilted, about 3 minutes.

Add your grain, mix all together and then pour into serving bowl.

I didn't mix my dressing, I just poured 1 Tbsp of Olive Oil, 2 Tbsp of Vinegar, Parsley and Salt & Pepper to taste.

Toss together and taste to see if you need any other dressing.

Serve warm or cold.

Note: You can use your own Italian Dressing instead of making this one.

    I am going to make this later today, but I don't know how much spinach to add. It wasn't listed in the ingredients, only in the directions. I think I'll add 2 cups and see how that works. - 8/11/12
