Detox Soup

Ingredients
(Serves 6)Ingredients• 2 tsp olive oil• 1 leek, thinly sliced• 1 onion, finely chopped• 2 cups salt reduced vegetable stock + 3 cups water• 420g can chopped tomatoes• 3 carrots, peeled and cut into 1cm cubes• Half celery chopped• 1 broccoli head steamed• Chilli (optional)
Directions
Method

1) Heat the olive oil with onion in a large saucepan.

2) Add the leek and gently cook over a low heat until soft, then add the stock, tomatoes, carrot, and chopped celery. Also, add desired amount of chilli.

3) Bring to the boil, reduce the heat and simmer for 10 minutes.

4) Top with steamed broccoli.
