Lemon Galric Tilapia over Whole Wheat Penne

2 oz. whole wheat penne3.5 oz tilapia1 tsp black pepper1 tbs basil leaves finely chopped.5 tbs minced garlic.5 tbs lemon curd2 tsp olive oil divided1/8 cup panko bread crumbs
In small container, combine 1 tsp olive oil, black pepper, basil, garlic, curd and bread crumbs. Consistency should be crumby and a little paste-like. Set aside.
Dry tilapia thoroughly and spray each side with non-stick cooking spray. Cook for 3-5 minutes on each side in a small skillet over high heat.
Spoon bread crumb mixture over fish and serve all over penne with the last tsp of olive oil stirred in it.
