1 can of black-eyed peas1 can of corn1 cup of cherry tomatoes, halved1/2 cup of carrots, grated (or matchsticks)1 Tbsp dried minced onion1/2 cup of apple cider vinegar (or red wine vinegar)1 scant tablespoon of lemon infused olive oil
Directions
mix it all together and let it sit for at least an hour before serving
