Ginger-Pear Bread

Ingredients
3 c. chopped unpeeled pears (about 3 medium)1 1/4 c. sugar1/2 c. vegetable oil1 t. ground ginger3 eggs3 cups flour3 1/2 t. baking powder1 t. salt
Directions
Heat oven to 350. Grease bottoms only of 2 loaf pans. Mix pears, sugar, oil, ginger and eggs in large bowl. Stir in remaining ingredients. Pour into pans.

Bake loaves 50-65 minutes. Cool 10 minutes. Loosen and remove from pan. Cool on wire rack. Store tightly wrapped in refrigerator up to 1 week.

48 slices (24 each loaf) or 48 muffins.
