2 eggs (beaten)4 mushroomshalf red pepperhalf yellow pepperhandful of beansproutsquarter of a courgette (zucchini)small amount of cooking oilsoy sauce
Chop the vegetables into similar sized chunks and cook in a microwave for about 3 minutes. Add oil to a frying pan and add beansprouts in soy sauce. Add the rest of the veg and cook until soft. Finally add the egg and leave until cooked, alternatively cook most of it then finish off under the grill.
