Cook Up Rice with Salt Fish & Okra

Ingredients
White Rice, long grain, 2 cup Onions, raw, 1 medium (2-1/2" dia) Red Ripe Tomatoes, 3 plum tomato Thyme, fresh, 4 tsp *Onion powder, 2 tbsp Garlic powder, 2 tbsp *chicken bullion cube, .5 serving Okra, 2 cup slices *Wild Pollack Fillets, 16 oz *Crisco Pure Vegetable Oil, 3 tbsp
Directions
boil salted cod/pollack fillets for 20 minutes.

while boiling out the fish, prep the veggies. slice onion and tomatoes into half moons, and slice okra onto 1 inch slices.

drain and rinse fish and set to the side.

in a large pot (about 5 quarts) saute onions, tomatoes, and thyme in vegetable oil for about 5 minutes.

add sliced okra and saute for another 10 minutes.

add four cups of water and seasonings. let come to a boil and rice.

reduce heat and let simmer for 20-25 minutes or until all liquid is absorbed and rice is cooked.

let stand 5-10 minutes before serving.
