Ginger-Orange Chicken

Ingredients
4 boneless, skinless chicken breast halves2 Tbsp olive oil4 tsp minced fresh ginger1 tsp red pepper flakes4 Tbsp orange marmalade2 tsp minced garlic2 Tbsp dijon mustard such as Grey Poupon1/2 cup chicken broth3/4 cup orange juice
Directions
Makes 4 servings

In large skillet, brown chicken breasts on both sides in olive oil. Move them to a plate.

Add ginger, garlic and red pepper to the skillet. Cook 1 min.

Add marmalade, mustard, OJ, and chicken broth. Stir and simmer to reduce (thicken) for 5-7 min.

Add chicken to sauce and simmer uncovered til chicken is cooked thru and sauce is further reduced, about 10-15 min. Turn chicken after 5-7 min to coat with sauce and cook both sides.
