Gluten Free Scalloped Potatoes and Ham

2 lbs sliced red potatoes (skin on)1 1/2 cup Milk, Fat Free, Skim2 cups Mild Cheddar Cheese, shredded1/2 cup Onions, raw, chopped 3 tbsp Butter, unsalted2 tbsp Corn Starch12-13 oz diced cooked ham (all visible fat removed)
In sauce pan, melt 2 tbsp butter over low heat
When melted, add corn starch. Wisk til well mixed (should be a medium thickness sauce.
Add milk slowly, wisking as added.
keep stirring and heat over medium heat until desired thickness is reached.
Season with salt and pepper.
Melt 1/2 tbsp butter in pan
Add chopped onion. Heat over medium heat until browned.
Coat bottom of 9X13 casserole dish with 1/2 tbsp butter.
Pour 1/3 of the white sauce in the bottom of a large casserole dish.
Layer 1/2 of the sliced potatoes
Layer 1/2 diced ham
Layer 1/2 browned onions
Layer 1/2 cheese
Layer 1/3 sauce
Repeat potatoes, onion and ham.
Then rest of sauce and top with rest of cheese
Bake at 350 degrees for 20 minute or until potatoes are fork tender.
