Grilled Pork Chops and Sweet Potato Wedges

Ingredients
4 small sweet potatoes 1 1/2 pounds ut into 12 inch wedges1 Tablespoon olive oilkosher salt and pepper2 scallions chopped4 1inch thick bone in Pork chops (about 2 pounds)4 tablespoon Dijon mustard
Directions
Heat grill to med.-high. In a large bowl toss sweet potates with oil 1/4 teaspoon salt and pepper. Grill (reserve the bowl), turning often, until tender and slightly charred. 12-14 minutes. transfer potatoes back to the bowl and toss with the scallions.

Meanwhile season the chops with 1/4 teaspoon salt and pepper. Spread both sides of each chop with mustard and grill until cooked 5-7 minutes per side.

Serving Size: 1 pork chop and 1 sweet potao
