4 Tsp Olive Oil1 Onion, Diced2 Garlic Cloves, Mined1 Green Bell Pepper, Diced1 (14.5-Ounce) Can Diced Tomatoes w/Green Chiles1 (10-Ounce) Box Frozen Corn.25 Tsp Salt1/8 Tsp Cinnamon1 Pound Medium Shrimp, peeled and deveined2 Tbsp Chopped Fresh Cilantro4 Lime Wedges (Optional)
1. Heat the oil in a Dutch oven over medium-high heat. Add onion and garlic; stirring frequently, until golden, about 3 minutes. Add the bell pepper and cook, stirring frequently, until softened, about 2 minutes.
2. Add tomatoes, corn, salt, and cinnamon and bring to a boil. Stir in the shrimp; return to a boil. Reduce the heat and simmer, covered, until shrimp are just opaque in the center, about 4 minutes. Sprinkle with the cilantro and serve with the lime wedges.
