Cowboy Beans

Ingredients
1 Green Pepper1 small onion2 TBS olive oil1 roll ground sausage 2 cans White Northern2 cans Red Kidney2 cans Pintos1 bottle Hickory Smoked BBQ sauce1 cup brown sugar½ Honey2 TBS Black pepper2 TBS Garlic powder
Directions
Preheat oven to 350. Spray a large casserole pan with Pam or similar.
Chop onion and green pepper finely and fry in 2 Tbs olive oil until almost burned. Pour into a casserole pan. Cook sausage smashing it up to make sure there aren’t any big chunks. When cooked, place in casserole pan.

Open all the can of beans, drain only half of the liquid, and pour the beans into the casserole pan.

Add BBQ sauce, brown sugar, honey, Black pepper and garlic powder. Stir carefully until fully mixed. Taste and add more sugar, honey, pepper, garlic per taste if needed.

Place in oven and cook for at least an hour at 350. The longer the beans cook the better they taste. If you can put them on about 4 to 6 hours before serving, turn the temperature down to 250 after an hour and let them simmer.

Makes about 32 half-cup servings.
