Easy Skillet Chicken Quesadillas

Ingredients
1/2 Medium Onion2 Chicken Breasts, boneless, skinless4 Tbsp Sour Cream1 Red Ripe Tomato1/2 C 4 Cheese Mexican Blend 8 Whole grain Corn Tortillas (4" small)PAM Cooking sprayBlack Pepper to taste
Directions
Dice half of Onion & Chicken Breasts
Spray down pan with PAM and cook onions and chicken together until chicken is fully cooked and onions are transparent. Put aside.
Dice Tomato.
Heat Tortillas in skillet for about 30 seconds on each side.
Sprinkle one Tortilla with cheese,
Place some onion chicken mix with some diced tomato & sprinkle more cheese to top, dash of pepper.
Place an other tortilla on top,
return to skillet flipping until cheese is melted on both sides.
Enjoy with a Tbsp of Sour Cream on the side for dipping!
