1 cup unbleached white flour2+ cups whole wheat flour2 Tbsp vital wheat gluten2 Tbsp granulated sugar1 Tbsp oil1.5 tsp salt1 Tbsp. yeast1/2 cup warm soymilk1/2 cup water
In stand mixer, combine milk, sugar, oil, and yeast. Let stand 5 minutes.
Add 3/4 amount of flour, salt, gluten and start to knead until well combined. Add remaining flour or more until a soft dough forms. Knead about 10 minutes.
Form into a ball and let rise in a large oiled bowl. Cover with plastic wrap about 35 minutes. Punch down and let rise again about 30 minutes. Form into round and rise 10 minutes on cookie sheet.
Glaze with egg wash and bake for 35 minutes at 350 degrees
