Dave's Southwestern Barley Salad

3 cups water3 chicken bouillon cubes¾ cup pearled barley1 12 oz can black beans, rinsed and drained1 green bell pepper, chopped1 red bell pepper, chopped1 clove garlic, finely chopped1 cup frozen or canned (drained) corn½ cup red onion, chopped½ cup cilantro, finely chopped½ cup salsa or picante sauce2 tbsp lemon or lime juice3 tbsp light sour cream
Add bouillon cubes to water and bring to a boil. Stir in barley, and simmer for 45 minutes. Drain barley, set aside and let cool. In a large bowl, mix peppers, onions, garlic, beans, corn and cilantro. Add cooled barley. Just before serving, blend in lemon/lime juice, salsa and sour cream. Serve cold or warm as a salad, or in tortillas or pita pockets.
