Veggie Stuffed Pita Pocket

Ingredients
1 cup carrots1 cup cucumber1 cup mushrooms12 slices tomato1/2 cup pickle relish3 Tbs Basalmic Vinegar6 leaves Romain Lettuce3 Whole Wheat Pita Pockets cut in half
Directions
Take the carrots, cucumber, mushrooms and dice into small pieces (you can substitute any raw vegetables for the ones listed here), add the pickle relish and basalmic vinegar. Mix well. Line each half of pita bread with 2 tomato slices and 1 romain lettuce leaf. Spoon in vegetable mixture. Enjoy. If you want more protein, add beans or cooked diced chicken.
