Beth's Easy Tomato Soup

Ingredients

* 1 can (796 ml / 28 oz.) Diced Tomatoes* 1 can (796 ml / 28 oz.) Crushed Tomatoes* 1 container (900ml Tetra Pak / 3.6 cups) Chicken Broth [I used the 25% Less Salt variety of Campbell's to calculate this recipe!]* 2 tbsp. Diced Onion* 1 tsp. Baking Soda* 3 tbsp. Granulated (white) Sugar* 4 tbsp. Butter* 1 tsp. Dried Basil* 1/8 tsp. Fresh-ground Black Pepper
1. Put all ingredients into a large pot (Dutch oven type / size), and bring to a boil.
2. Reduce heat, and let simmer for about an hour.
3. Makes ten (10) 1-cup 'servings'. This soup is awesome with a tablespoon or so of grated Asiago cheese on top! [Optional, NOT included in nutritional information!] Enjoy! :)

When I made this, it ended up really buttery tasting (might be since I used ICBINB). I added extra basil and some condensed tomato soup, plus a little catsup. It came out pretty good. It really needed that garlic, but the store was out!! :( - 6/25/08

"Buttery tasting"...? I haven't a clue why, except that you used that ICBINB stuff. Try making it as written, and then reviewing again... Honestly, I wouldn't touch ICBINB with a 10-foot pole! I'm all for the real thing when I cook. ;-)

Delicious! I made this last night. It was easy and came out great. The only thing I did differently was I metled the butter in the pot first and sauteed the onion for a couple of minutes in it with about a teaspon of crushed garlic (not i the recipie). Thanks for this awesome and EASY recipie! - 12/31/07

YUM. I had a recipe similar to this and lost it, this is the perfect replacement. I loved it. I added some diced cooked bacon in with it for my husband and it was great with that as well. For those curious as to what the soda is in there for, I'm pretty darn sure it's just to keep the acidity down. - 8/12/11

Amazing, amazing...thanks Beth! I made some real stock from the chicken I had baked earlier....and I did cut down on the butter to 2 Tblsp...that was fine....do you think that you could substitute and use olive oil and get close to the same taste! Thanks again...will share this recipe too!! - 3/5/10
