Crab and Rice Salad

Ingredients
1.5 cups brown rice (raw)12 oz crab1/2 cup diced sweet red pepper1/2 cup diced sweet yellow pepper1 cup chopped celery1/2 cup light mayo1/2 cup light sour cream2 TBS lemon juice
Directions
Cook brown rice.
Add cleaned crab, celery, peppers and scallions.
Mix sour cream, mayo and lemon juice. Mix well and chill until you are ready to eat.

    Didn't use my red pepper as it was too soft. It would have added a nice touch of color though. I added a dose of Jane's Krazy Salt and it was very good. Large portion. Nice recipe for a summer day. - 6/14/11
