Chicken Breast, no skin, 4 ouncesSesame Oil, 2 tspCarrots, raw, 0.25 cup, chopped Onions, raw, 0.25 cup, chopped Zucchini, 0.25 cup, sliced Red Bell Pepper, chopped, 0.25 cup Garlic, 1 tsp Brown Rice, long grain, 0.75 cupSoy Sauce, 1.5 tsp Ginger Root, 1 tsp Rice Wine Vinegar, 1 tsp
Saute 3 oz thinly sliced boneless, skinless chicken breast in 2 tsp sesame oil with 1/4 cup each chopped carrots, onion, zucchini, red bell pepper, 1 tsp chopped garlic, until chicken is fully cooked and vegetables are soft. Add 3/4 cup cooked brown rice, 1 1/2 tsp reduced sodium soy sauce, 1 tsp rice wine vinegar, 1 tsp fresh ginger. Cook until ingredients are fully blended, about 5 minutes.
