Honey-Nut Chicken Stir-Fry

Ingredients
2 boneless, skinless chicken breast halvesl2 cloves of garlic, finely diced15-20 baby carrots, chopped2 stalks celery, chopped2 green onions, chopped1 cup chicken broth2 tbsp soy sauce1 tbsp orange marmalade2 tbsp honey2 tsp ground ginger
Directions
Cut chicken into small, bite-size pieces. Finely dice garlic. Heat 1/2 tbsp olive oil in a skillet until very hot. Add garlic, stir for about 30 seconds, then add chicken and turn heat down to medium. Stir fry chicken until cooked through, then remove to a bowl. Add a little more oil if needed, then add carrots. After about 1 minute, add celery. Stir-fry until vegetables are cooked, but still crisp. While veggies are cooking, mix together chicken broth, soy sauce, orange marmalade, and honey. Add chicken back in, and add green onions. Pour broth mixture over top. Sprinkle in ginger. Stir. Continue cooking and stirring until sauce thickens. Serve over rice or noodles - I like to add the rice or noodles into the meat, veggies, and sauce to cook together for a minute or two.

Makes 8 servings - approx. 1/2 to 3/4 cup of meat and veggies.
