San Choy Bow

8 Iceberg lettuce leaves500 grams pork mince (or chicken mince)100 grams chestnuts thinly chopped100 grams mushrooms (any type you want) thinly chopped1 onion diced2 tsp cornflour2 cloves of garlic thinly chopped2 tsp ginger crushed or chopped2 tbsp soy sauce1 chicken stock cube1/2 cup of waterHoisin Sauce to serve it with.
1) Heat a frying pan up with oil and add onions, ginger, garlic and fry for a couple minutes.
2) Add the mince and fry until cooked and then add the chicken stock cube, cornflour and 1/2 cup of water, stiring through.
3) Then add the chestnuts, mushrooms and soy sauce and simmer for 4-5 minutes.
4) Serve up.... put a spoon of the mixture into a lettuce leaf and top with tsp of hoisin sauce, and eat :)
Can be quite messy but really yummy to eat.
