Mock Mashed Potatoes

Ingredients
1 med head of Cauliflower- cut into small pieces1/4 cup Grated Parmesan Cheese1 Tbsp Cream Cheese- softened2 large cloves of garlic- minced1/2 tsp. of fresh cracked pepper1/8 tsp of Chicken Bouillon or stockFresh Rosemary or chives for garnish
Directions
Fill a large stock pot with water and boil. Add Cauliflower pieces and boil for 6 minutes or until soft. Drain cauliflower but do not cool. Place cauliflower between paper towels to dry COMPLETELY! (they'll be runny otherwise) Put hot cauliflower in food processor with Cream Cheese, Parmesan, garlic, bouillon, and pepper. Blend until smooth. Garnish with Chives or Rosemary and Enjoy!!
