Quick & Tasty Cod Bake

Ingredients
5 Atlantic Cod Loins1/4 cup Panko Bread Crumbs2 tablespoons grated Parmesan cheese1 teaspoon olive oilPinch of celery salt and dry mustard1/2 crumbled bay leaf1/8 teaspoon ground fennel seed1/2 cup Hellmann's Light MayonnaiseSalt and Pepper to taste
Directions
Preheat oven to 450 degrees F (230 degrees C). In a small bowl, stir together the bread crumbs, cheese, oil, celery salt, dry mustard, bay leaf, fennel seed, salt and pepper; set aside. Season fish with salt and pepper. Brush the fish with mayonnaise, then spoon the crumb mixture evenly on top. Coat baking pan with cooking spray. Place the cod on the pan. Bake in preheated oven for 15 to 20 minutes, or until the fish flakes easily when tested with a fork and is opaque all the way through.
Serve with rice pilaf and steamed vegetables.
