1 t Tarragon, fresh or ground2 T White Balsamic Vinegar4 T Walnut Oil1 T Honey (optional) 1 T shallot (minced)1 T orange peel2 large oranges (slices)5 boiled beets (sliced)1/4 c chopped walnuts 2 oz crystallized ginger4 cups arugula
Serving Size: 4
Mix Tarragon, vinegar, walnut oil, honey, shallot and orange peel together to create dressing.
Mix oranges beets, walnuts and ginger.
Serve beet salad over lettuce and drizzle with dressing as desired.
