1 Tbsp olive oil4 chicken breasts, skinless2 cloves of minced garlic1 tsp. oregano1 tsp. basil2 cans Hunt's fire roasted tomatoes with garlic2 cans cannellini beans (white kidney beans), drained and rinsed
Heat olive oil in pan, add chicken breasts, and sprinkle with minced garlic, oregano and basil. Brown until juices run clear. Add two cans of fire roasted tomatoes with garlic and two cans of cannellini beans (white kidney beans). Cover and simmer for 20-30 minutes.
I served this with zucchini sauteed in olive oil and sprinkled with mozzarella cheese.
