6 slices wheat Bread6 Eggs6 Slices Ham2 Cups diced Tomatoes4 oz grated Mozzarella Cheese, part skim milk1 cup chopped Onions1 tbsp Olive Oil
Drizzle a large baking dish with olive oil. Saute the onions in the rest of the oil. Mix with diced tomatoes and seasoning of your choice. Lay bread slices in baking dish. Top with ham slices. Cover all with tomato/onion mixture. Break 6 eggs approximately over the bread/ham. Top with grated cheese and bake.
