Tropical Protein mini muffins

Ingredients
I made these protein muffins from a recipe from eggface www.theworldaccordingtoeggface.com-50-60 grams low fat cottage cheese- 3 tablespoonsSF syrup (for example Torani french vanilla)-1 egg beaten-1/2 cup pineapple chunks-1/2 cup protein powder (vanilla)-3/4 cup whole wheat panckae mix-1/4 cup toasted coconut-1 teasppon baking powder
Directions
I made these protein muffins from a recipe from eggface www.theworldaccordingtoeggface.com

mix cottage cheese and pineapple chunks and 3 tablesppons of sugarfree syrup (i used torani french vanilla) and egg : blitz in food processor.
Mix flour/protein powder (i used vanilla) and toasted coconut with 1 teasppon baking powder.

Mis wet and dry together and spoon into mini muffin tin. Top each dollop with s sprinkle of coconut and a pinch of SF jello lime powder for taste and color.

Serving Size: makes 24 mini muffins
