Meringue "cookies"

Ingredients
2 large egg whites2/3 cup granulated sugar1/4 tsp cream of tartar1/2 tsp flavoring of choice (almond, strawberry vanilla, rum, etc.)
Directions
1. In a large bowl, with a mixer on high speed, beat egg whites with cream of tartar until thick and foamy. Gradually add sugar and continue to beat until mixture holds stiff, shiny peaks.
2. With a spatula, gently stir in flavoring extract and any add-ins. Spoon 1/2-tablespoon portions into 1-inch-wide mounds (or with a pastry bag fitted with a 1/2-inch plain or star tip, pipe 1-inch-wide mounds) about 1 inch apart onto cooking parchment - lined 12- by 15-inch baking sheets.
3. Bake meringues in a 275° regular or convection oven until dry and firm to touch on the outside and almost dry inside (break one open to test), 30 to 35 minutes; if baking two sheets at once in one oven, switch their positions halfway through baking. Let cool for 5 minutes on sheets, then slide a spatula underneath meringues and transfer to racks to cool completely.

    I made these last year for Christmas. You can make the mounds and sprinkle things like nuts, sprinkles, colored sugar, candy canes, and the like. You can even swirl in some food coloring and it is really pretty. :D My favorite were the ones that had crushed walnut. yummy! - 5/19/10

    It's pretty cool, but when I started adding in rootbeer flavoring, I found that I need more then the recipe calls for. This is probably specific to this flavoring ,given all the good comments so far. :3 - 1/4/16

    Okay - I am having a really hard time successfully frothing up these merignue's. I get them all frothy and once I add the extract, it liquifies. However, I did use the liquid anyway(poured in muffin cups & baked) and they were delish!
