Almond Chicken Salad with Asparagus

Ingredients
2 cups asparagus tips, diagonally cut1/2 cup plain, non-fat yogurt1 teaspoon curry powder1 teaspoon fresh lemon juice1/4 teaspoon salt1/8 teaspoon fresh ground pepper12 ounces cooked skinless, boneless chicken breast, chopped1/2 cup red bell pepper, seeded and chopped1/4 cup fresh cilantro, chopped2 tablespoons sliced almonds, toastedspinach leaves
Directions
1. Steam asparagus for 2 minutes or until crisp-tender.
2. In a medium bowl, whisk together the yogurt, curry, lemon juice and salt.
3. Add asparagus, chicken, bell pepper, cilantro and almonds and toss to coat.
4. Serve over spinach.
Serves 4.

    Very tasty- the kids and hubby ate every bite too. Next time grapes or apples sound like a good idea, and upping the curry taste also. I will serve the cilantro on the side, though.. not everybody is as crazy for it as I am!! - 8/17/08

    It sounds very good but the nutritional facts dont add up. I went through the information you provided and recaculated as best I could and the sodium/cal/fat and cholesterol were all higher then reported. Its still wouldn't be a un-healthy recipe but its always best to know exactly what your eating. - 6/14/09

    Outstanding! Very satisfying and tasty! I added a handful of seedless grape halves, or your could use diced apples or mandarin oranges too. The calorie count is low enough that even by adding a fruit you are good to go. - 4/14/07

    I made this yesgterday and had the refrigerated leftovers today. I like it better cold and I think the curry is over-powering. I will make it again but use less curry and maybe some other spices. Good base to play around with and easy to use with other left overs. - 4/19/09

    I LOVED this! I added a little extra curry, salt and pepper and the flavors were outstanding. My husband was a fan too. When I asked if there was anything I could do different he suggested raisins. Sounds like some people have tried this addition and like it too! - 4/14/08

    Looked great and tasted great! I used a yellow pepper instead of red, spring mix greens instead of spinach , and skipped the cilantro because those are the things I had at home. My husband thought the presentation and the taste was as good as any restraunt. I will definately make this again! - 3/27/08

    My husband and I both said, "pretty good." I added some celery and dried apples (I was reaching for raisins and saw the apples and used them instead). I miss the fullness of flavor that mayonnaise gives, but yogurt is a healthier binder. Would make it (or a variation of it) again. - 6/13/09
