Yams 1.375 cups (11 oz) dicedCarrots .8125 cups (6.5 oz) choppedonion 3.5 tbsp (1.75 oz) chopped very fineSweet Potato 2.75 cups (1 lb 6 oz) dicedMargarine 1/3 cup or 5. 333 tbsp(70% vegetable oil)
Peel and dice all vegetables add margarine and place in a covered casserole dish. You may choose to add spices of your preference (cloves,or cinnamon, or garlic) Myself I don't mind the cinnamon but then I will add 1/4 cup of splenda brown sugar. Makes it more of a Christmas dish.
Bake at 325 Fahrenheit for 60 minutes or until all vegetables are soft enough to mash.
You may serve the dish mashed or leave diced, that's your choice.
