Ingredients
Fresh Direct Whole Wheat Pizza Dough (thawed)Mozzarella Cheese, whole milk, 8 oz, sliced thinlyRed Ripe Tomatoes, 2 medium whole, slicedBasil, 25 leavesPine Nuts, 2 tbsp, toastedParmesan Cheese, grated, .25 cupOlive Oil, 2 tbspLemon, 1 tbsp zest and 1 tbsp juiceGarlic, 2 clove, roughly choppedBread crumbs, dry, grated, seasoned, .2 cup
Directions
Preheat oven to 500 degrees.

Combine basil, parmesan, toasted pine nuts, lemon zest, lemon juice, and olive oil in small food processor. Blend until smooth.

Sprinkle baking sheet with bread crumbs. Briefly knead pizza dough and roll out to a thin crust (about 12-16" in diameter). Transfer to the baking sheet carefully. Poke holes into the dough with fork to prevent rising.

Spread pesto mixture onto dough, top with tomato and mozzarella slices. Bake for approximately 12-15 minutes, until crisp.

Serve...one piece and a salad will be a decent lunch portion.
