Coach Nicole's Favorite Summer Salad

2 cups mixed salad greens, rinsed and drained5 large Romaine lettuce leaves, rinsed, drained and torn into pieces0.5 oz. roasted and salted pecans, coarsely chopped1 hard boiled egg, chilled and chopped0.5 oz. goat cheese, crumbled1/2 cup cooked garbanzo beans (chickpeas)10 red, purple or black grapes, halved1-2 thin slices of red onion, finely chopped
Combine all ingredients into one large bowl. Top with dressing of your choice. Devour happily.
Serving Size: Makes one heaping and delicious salad!

Maybe we are limiting our definition of a salad as the skinny part of a meal, the side dish. How about sometimes making it the main part, with this type of salad, and having your sides as the low calorie additions. Something this nourishing deserves to be front and centre, perhaps? - 6/13/21
