Southwestern Tabbouleh Salad

Ingredients
1 cup uncooked bulgur wheat1 cup boiling water2 tomatoes, chopped4 green onions, chopped1 can black beans, rinsed and drained1 small can no-salt added corn, drained1/2 teaspoon grated lime rind1/4 cup fresh lime juice2 tablespoons olive oil1/2 teaspoon ground cumin1/2 teaspoon red pepper1/4 teaspoon salt
Directions
Place bulgur in a large bowl, ad 1 cup boiling water. Cover and let stand 30 minutes.

Add chopped tomato and remaining ingredients to bulgur. Toss gently. Chill up to 8 hours.
