Ricotta cheese Oatmeal Pancakes

1 cup old fashioned oatmeal ( finely ground)1 cup lowfat Ricotta cheese ( pureed)1/2 cup egg beaters or 4 egg whites1/2 tespoon baking powder1/4 teaspoon vanilla extractDash of nutmeg or cinnamonwater 2-4 tsp water
Use blender or food processor to finely ground oatmeal to flour consistency, empty into a mixing bowl.
Add ricotta to the blenderuntil pureed then add eggs, then oatmeal add remaining ingredients, think with water to desired consistency, can be placed in the refrigerator overnight.
pour about a 1/4 cup of batter on to a non stick griddle or skillet over medium to medium-low heat. bake until bubbles appear on the surface( takes a little bit longer to cook than regular pancakes) flip. Serve with your choice of syrup !
