Ingredients
2 slices French Meadow Gluten Free Sandwich Bread3 slices roasted eggplant3 slices roasted zucchini3 slices fresh tomato1 Tbsp prepared pesto1 oz part-skim mozzarella
Directions
Toast bread until golden brown. Spread with pesto. Layer eggplant, zucchini, tomato slices and cheese and top with other slice.
