Mini Pecan Pie Muffins

Ingredients
1 cup packed brown sugar1/2 c flour1 cup chopped pecans2/3 c melted butter2 eggs, or substitue equivalent1 tsp vanilla
Directions
Combine brown sugar, flour and pecans in a medium sized mixing bowl. In a smaller mixing bowl, mix well butter, eggs/substitute, and vanilla. Stir into the flour mixture. Fill greased mini-muffin tins 2/3 full. (I sprayed each tin with fat-free butter/baking spray). Bake in 350 oven for about 14 minutes until set.
