Lemon Pepper Baked Cod

6 fillets cod3 lemons3 tsp lemon pepper seasoning3 tsp olive oil
Preheat oven to 400ºF.
Place 3 pieces of tin foil on a baking sheet. In the centre of each, place 2 fillets of cod and fold the sides up a little bit to form a sort of bowl.
Squeeze the juice of a lemon over each pair of fillets, then sprinkle each pair with a tsp of lemon pepper seasoning and drizzle a tsp of olive oil over that.
Fold the tin foil into a little packet, leaving a small opening for a steam vent.
Bake 25-30 minutes or until fish flakes easily with a fork.
Serving Size: Makes 6 fillets
