Brown Rice Pilaf

Ingredients
1/2 medium onion1/2 bell pepper TBL olive oi1 cup brown rice2 cups low sodium chicken broth1/2 cup Cashews (chopped) 1/2 cup craisins.
Directions
Saute onion and pepper in olive oil until they are soft. Add rice, saute that until it smells nutty. Getting a little canalization on the veg and rice adds a lot to the flavor. Add broth (at this point you may also add seasonings to taste - like thyme or a bay leaf). Cook 45 minutes. Fluff with fork. Stir in Cashews (chopped) and Craisins.
