Pineapple Sorbet

Ingredients
3 cups chopped pineapple (about 2/3 pineapple)1 1/4 cup water1 1/4 cup sugar1 T fresh lime juice
Directions
1. In a large saucepan, bring sugar and water to a boil over medium-high heat. Cook until sugar has completely dissolved (about 10 minutes). Let cool.
2. Place pineapple and lime juice in food processor and process until very smooth.
3. Add syrup to pineapple puree in a bowl.
4. Cover bowl and refrigerate until completely chilled before freezing.
5. Pour mixture into an ice-cream maker and freeze according to manufacturer's instructions.
6. Freeze in an airtight container.

Makes 8 1/2-cup servings.
