White Chocolate Strawberry Oatmeal Cookies

3/4 cup all purpose flour, (whole-wheat pastry flour works too)1 cup regular oats1/2 tsp baking soda1/4 tsp salt3/4 cup brown sugar1/4 cup butter, softened1 tsp pure vanilla1 large egg3/4 cup dried strawberries1/2 cup white chocolate chipsCooking spray
1. Preheat oven to 350 F.
2. Combine flour, oats, baking soda, and salt; stir with a whisk. Place sugar and butter in a bowl and beat at med speed until well blended. Add vanilla and egg; beat well. Gradually add flour mixture, beating until blended. Add strawberries and chips, beat at low speed just until blended.
3. Drop dough by tablespoonfuls onto baking sheets coated with cooking spray. Bake at 350 F for 12 mins or until lightly browned. Remove from oven, remove cookies from pan, and cool on wire rack.
