Classic Drop Biscuits from The Gluten-Free Almond Flour Cookbook

2.5 cups almond meal/flour1/2 tsp sea salt1/2 tsp baking soda1/4 cup coconut oil1/4 honey2 large eggs1 tsp lemon juice
Preheat oven to 350 F.
Combine almond flour, salt, and baking soda. In separate bowl, whisk together coconut oil, honey, eggs, and lemon juice. Stir wet ingredients into dry ingredients until combined. Drop scant 1/4 cups of batter 2 inches apart onto baking sheet lined with parchment paper or Silpat.
Bake 15-20 minutes, until golden brown. Cool briefly on baking sheet, then transfer to cooling rack or serve warm.
Makes 14 biscuits.
