Hash Brown Breakfast Casserole

6 cups frozen shredded hash brown potatoes8 oz egg substitute (eggbeaters)1 tsp salt3 tsp hot sauce1/2 skim milk2 tbsp bacon bits2 cups 2% shredded cheddar cheese1/2 cup green onon chopped 1/2 tsp black pepper(Can also add 1/2 cup of red and/or green peppers, if desired)
Mix together potatoes, eggbeaters, salt, hot sauce, green & red peppers, and onions, skim milk and 1 3/4 cups cheese, 2 tbsp of bacon bits. Place in 9 inch pie plate sprayed with pam. Bake at 350 degrees for40-45 minutes or until center is set. Sprinkle with rest of cheese . Cook for additional 5 minutes until cheese is melted. Cut into six or 8 pieces. The nutritional value is based on eight servings.

Sounds yummy. Want to try this. My only question is - I see green and red peppers in the directions, but not in the ingredients. How much green and red peppers? - 5/7/11

I change this constantly using green & red peppers (about 1/2 cup of each ) with green onions (same amount). It depends on what you like. Sorry for the error.
