wild rice stuffing

Ingredients
1 cup uncooked wild rice2 tsp or 2 cubes low sodium bouillion1 cup thinly sliced fresh mushrooms2 med. apples diced (1 red 1 green for color)1 cup diced celery1 lg onion finely chopped1 tsp poultry seasoning2 small cloves garlic minced1 tsp pepper black or white / 1 tsp tarragon
Directions
Cook rice according to pkg. directions, add the bouillion to the water, saute onion, mushroom and garlic in a pan with 1 tsp olive oil. When the rice is done, add all the other ingredients mixing well until completely blended. Stuff Turkey and bake Turkey makes 4-1 cup or 8-1/2 cup servings

    This is very similar to the stuffing I make every year. I do add a little salt and a little sage before stuffing. I used to cook a package of sausage and add it to the recipe, but this year I plan to leave it out. If I change my mind at the last minute, I'll use turkey sausauge. - 11/23/08
