Harvest Pork Chops

Ingredients
8 boneless pork loin chops1 cup chopped celery3/4 cup onion, chopped1/4 cup fresh snipped parsley1 16 ounce package stove top stuffing mix2-2 1/4 cups water1 cup dried cranberries1/4 cup butter, melted1 teaspoon dried thyme leaves1 teaspoon salt1/4 teaspoon ground black pepper1 tablespoon veggie oil, divided1/2 cup orange marmalade
Directions
1. preheat oven to 350 degrees. trim fat from chops. insert knife into each chop into center of one long side and cut a small pocket. 2. chop celery and onion. place in large bowl. snip parsley. add to bowl along with stuffing mix water cranberries and butter. mix lightly. 3. stuff a scoop of stuffing in pocket of each chop. close pocket w/ toothpicks. 4. heat over medium high heat. add half of oil and 4 chops. brown chops on both sides. remove to oven. arrange chops over stuffing. bake 40 mins. remove. 5. microwave marmalade 30 secs. spoon over chops. continue baking for 10-15 mins. remove picks.
