1.55 cups yellow cornmeal (or white)2.55 cups buttermilk2 cups gluten free all purpose flour1 T baking powder1 tsp baking soda1 tsp salt.66 cup sugar2 large eggs.55 cup vegetable oil or melted butter
Preheat oven to 400 degrees. Combine cornmeal, milk, eggs and oil. Let stand 10 minutes. Combine gluten free flour, salt, baking powder, baking soda. Stir into liquid mixture. Bake in greased 9 x 13 pan or large preheated iron skillet, buttered. Bake 30 minutes or until done in center.
