Pumpkin Soft Cookies

1/4 cup margarine1/4 cup unsweetened applesauce1 cup brown sugar1 egg1 tsp vanilla1 cup canned pumpkin (NOT pie filling)1 tsp baking sodadash salt2 1/2 tsp cinnamon1 1/2 tsp ginger3/4 tsp allspice3/4 tsp nutmeg3/4 tsp cloves2 cups flour1 cup raisins1/2 cup walnuts
1. Preheat over to 350F. Cream together margarine, applesauce, and sugar.
2. Beat in egg and vanilla.
3. Mix in pumpkin.
4. Add baking soda, salt, and spices. Mix thoroughly. NOTE: I just like spicy cookies. You could use pumpkin pie spice, or whatever mixture of spices you like or don't.
5. Stir in flour.
6. Add raisins and walnuts. Mix.
7. Drop by rounded teaspoon onto parchment papered cookie sheet. NOTE: These will not melt and spread like most cookies, and will not crisp. Soft and cake-like. Bake 12-13 minutes.
Serving Size: Usually 2.5 dozen. More or less.
