Chicken & Rice Stew

Ingredients
4 Chicken breasts - deboned, skinned and chopped into bite-sized pieces1 cup brown rice3 stalks of celery, chopped1 large onion, chopped1 cup of carrot, chopped1 T olive oil2 cups chicken stock1 t oregano1 T rosemary2 T salt (kosher)1 T pepper, black
Directions
Chop all veges and saute on medium high in olive oil in a large stew/soup pot until soft. Debone chicken and chop into bite-sized pieces. Add rice, chicken, stock, & spices. Bring to a boil and then simmer unitl rice is done.
