Rob's Low Carb Venison Meatloaf

Ingredients
Directions
Ground Venison, Onion, Low Sugar Ketchup, Salt, Pepper, *Other seasonings to taste, 2 Eggs
Add to the ground venison both eggs, the ketchup and your seasonings and mix together.
* Feel free to experiment with seasonings. Sometimes I add dried red pepper flakes, Italian seasoning, Cajun spices, etc. They don't add much to the carb count or calories
Let the mixture stand while the oven heats to 350.
Mold into 4 individual mealoafs
Place on a large backing sheet and bake at 350 for 30-45 minutes.
Note: I typically slice individual loaves in half and microwave them for lunches. Baking for 30 minutes until just done ensures they don't dry out during reheating.

Rob must have edited the recipe, because I had no issues following the recipe. Since it's very basic you can add spices, veggies, etc. as you like. I added some Worcester Sauce and garlic in the mixture and made one whole meatloaf out of it.
I also added some flaxseed meal for binding...very nice! - 7/7/11

I'm sure that Rob knows exactly what he's talking about regarding this recipe but...no one could possibly follow it! Egg isn't listed in the ingredients but is listed in the instructions, pork rinds are listed in the ingredients but not the instructions. Shame...as this does sound good. - 5/22/11
